In honor of our wedding anniversary (10/2) - we had a layer of carrot cake (Lance's favorite) at our wedding! :)
 
These are a bit of a labor of love, but our family loves carrot cake....so. these muffins are mini carrot cakes disguised as a muffin! Moist and delicious, Heather uses lots of carrots, pecans, coconut....and the cream cheese frosting takes them to the next level!
